Alessandro Pavoni, a luminary of Lombardian cuisine, has woven his culinary magic from the tranquil landscapes of Lombardy, Italy, to the vibrant dining scene of Australia. Hailing from Brescia, Lombardy, Pavoni’s culinary journey began with a deep-rooted passion for the rich traditions of his homeland.

In 2003, after working with esteemed chefs across Italy and France, Pavoni made it to our shores, where he assumed the role of Head Chef at Park Hyatt Sydney. His arrival heralded a new era of Italian dining, captivating diners with his inventive interpretations of classic Lombardian dishes. Under his stewardship, Park Hyatt Sydney attained critical acclaim, solidifying Pavoni’s status as a culinary luminary.

In 2009, Pavoni, fuelled by his ambition, realised his dream, and opened “Ormeggio at The Spit.” Nestled along the tranquil waters of Middle Harbour, “Ormeggio” swiftly ascended to culinary stardom, garnering two coveted Chef’s Hats in the prestigious national Good Food Guide and maintaining its hatted status since inception. The establishment’s success paved the way for “Chiosco by Ormeggio,” a quintessential seaside trattoria, which opened its doors in late 2014, delighting patrons with its authentic Italian fare. In late 2020, Pavoni unveiled “a’Mare,” a quintessential Italian fine-dining destination nestled within Crown Sydney, overlooking the picturesque harbour. “a’Mare” pays homage to Italy’s culinary traditions, offering nostalgic classics with a focus on impeccable service and elegance.Pavoni’s culinary prowess extends beyond the kitchen, showcased in his acclaimed cookbook, “A Lombardian Cookbook,” which celebrates the time-honoured recipes of his beloved Lombardy.In recognition of his culinary contributions, Pavoni was honoured with the Restaurant and Catering Association NSW Restaurateur of the Year award in 2021, a testament to his unwavering dedication to excellence.

Beyond his culinary exploits, Pavoni’s zest for life knows no bounds. A keen golfer, stand-up paddleboarder and Brazilian jiu-jitsu, he embraces each day with boundless energy and passion.
