Fia Gulliksson
Fia Gulliksson Chef, Serial Entrepreneur & Experiential Concept Architect | The Nordics, Estonia, Slovenia
Fia Gulliksson is a force of nature whose life’s work sits at the kitchen pass, the open fire, and the intersection of creative gastronomy and sustainable community development. Above all else, Fia is a “Chef entrepreneur” driven by a mission to change the world through good food ecosystems. Utilising her deeply personal, unmatched network of local masters and close friends, she grants travellers exclusive “money-can’t-buy” access, opening doors to extraordinary locations, private tables, and insider experiences that remain firmly shut to the public. In recognition of her immense contributions to creative gastronomy, she was awarded an honorary doctorate by Mid Sweden University 2016.
Her culinary influence spans from her home region of Jämtland, where she was the driving force behind establishing Östersund as one of the world’s very first UNESCO Creative Cities of Gastronomy, to the international stage. Fia’s diverse career includes executing flawless luxury gastronomy and logistics for high-profile clients and serving as the Head of Nordic Experiences at Pantechnicon in London. Fia is also a skilled “Winefinder” and sommelier who partners with Nordic 4 to import exclusive, limited-production artisan wines, ensuring that what is in the glass perfectly honours what is on the plate.
As a Creative Director and Concept Architect, Fia is an expert in regional food cultures, specialising in the deep heritage of the Nordics, the creativity and traditions of Estonia, and the biodynamic viticulture of Slovenia.
As founder of Food In Action and creator of the award-winning Jazzköket (voted Sweden’s most sustainable restaurant), she views the dining table as a stage for human connection. To step into Fia’s world, whether cooking alongside her at her private lakeside Boathouse in Ope, foraging in the wild, or tasting rare artisan gems, is to experience a deep connection with the land, where every ingredient tells an unforgettable story.

Arrival & Midsummer Sæter Feast
Our adventure starts in Trondheim Norway. Trondheim is an historic riverside city in central Norway, renowned for its colourful wooden wharves, the magnificent Nidaros Cathedral, and its role as a former royal capital. Following a private transfer by VIP mid-coach to Olsmedalssætra in Rennebu, you will arrive at a 1640s living heritage farm. Lena Flaten joins from the very first moment to cook an open fire welcoming feast beneath the midsummer sky. Sleep with the quiet that envelopes the landscape before a morning hike to a rewarding viewpoint where the colours of the landscape fill you with energy. To compliment the silence, enjoy hot coffee and freshly baked treats. . Following our descent, a hearty brunch before we head to the norwegian Coast. We will drive through the picturesque landscape before arriving at Stokkøya Strandhotell.

The beach, a long stretch of pale sand backed by a landscape where nature dominates; you’ll find sea eagles overhead, wild coastal birds, and marine life that shifts with the seasons. Highlights include a private fishing expedition and seafood dinner with Roar Svenning as well as wild kelp harvesting and a coastal foraging walk with Lena that ends in a beautiful outdoor lunch by the sea cave. The surrounding area supports hiking through small paths on the hills with views across the North Sea. You can kayak, hike, or bicycle. The entire setting is designed around immersion.

A private transfer returns guests to Trondheim Airport. Our time with Fia and the crew has come to an end. From here you can choose to go on your merry way or join me as I head further north to Niehku. Following an easy onward connection to Narvik we head again into the wilderness.

In the endless light of midsummer, we will spend days hiking across the fells on both sides of the border, immersed in Sámi culture and the wild beauty of the high Arctic, before returning each evening to a table built around the forest, fish and seasonal ingredients of the surrounding mountains.
